Tunnel freezers are an excellent way of maintaining food quality, so that when they are frozen, they keep the nutritional, visual, texture and taste qualities they had when fresh. Tunnel freezers work by first chilling the product to a temperature of around 5°C with a vapourisation temperature of 0°C. The second stage freezes to a temperature of up to -18°C (depending on requirements) with a vapourisation temperature of -40°C.
